Chibanos is a Chinese-Cuban sandwich shop and café rooted in family recipes and a journey that began 100 years ago.
Evan’s grandfather, Enrique Fong, emigrated from China to Cuba in the 1920’s, seeking opportunity and an escape from Communism that he and his family later faced again in Cuba in the 1960’s, prompting “Los Chinos Cubanos” to take a Freedom Flight from Cuba to the US in 1967.
Chibanos showcases recipes honed and cultivated over this 8,000 mile journey, with touches, influences, and evolutions from family members along the way. Although our family's bodega in Cuba no longer exists, we've rebuilt Chibanos in Philly with the same grit and spirit.

What in the Chibanos
Chibanos is the space that I wish existed when I was growing up as a Chinese Cuban Russian American, to feel a broader connection as a mixed-race kid.
Being bombarded with questions like “What are you? Asian? White? Hispanic?” was a frequent occurrence, and led me to try to understand where I fit, or didn’t, amidst various cultures, religions, and ethnic groups.
